Perfumery notes explained: from bergamot to oud

What “notes” actually are, how each family smells and where it sits in the pyramid, with a guide to the 30 notes you’ll meet most often.

A note is a description, not always an ingredient. When a product page lists “pear, pink pepper, sandalwood”, it tells you what you will smell, not necessarily what is inside. Pear has no extractable oil: its note is built from fruity esters. Even “sandalwood” may be a blend of natural oil and sandalwood molecules.

Citrus

Bergamot, lemon, mandarin, grapefruit and orange. Cold-pressed from the peel, bright and short-lived. Almost always top notes. Bergamot is the most important: softer and more floral than lemon, it is the heart of cologne and chypre.

Aromatic and green

Lavender, rosemary, sage, mint, basil, galbanum and violet leaf. Herbal, fresh and slightly bitter. Lavender is the backbone of the fougère family; galbanum gives an intense “snapped stem” greenness.

Floral

Rose, jasmine, orange blossom, tuberose, ylang-ylang, iris, violet and lily of the valley. The heart of most perfumes. White flowers (jasmine, tuberose, orange blossom) are rich and creamy, with a natural animalic touch from indole; rose is fresh and lemony or dark and jammy depending on the variety.

Fruity

Pear, apple, peach, blackcurrant, fig, raspberry and plum. Almost always recreated with molecules (esters, lactones). They add juiciness and youthfulness, mostly in the top and heart.

Spicy

Pink pepper, black pepper, cardamom, saffron, cinnamon, clove and nutmeg. Fresh spices (pepper, cardamom) lift the top; warm spices (cinnamon, clove) add heat to amber perfumes. Saffron is leathery and honeyed, a signature of modern oud perfumes.

Woody

Cedarwood, sandalwood, vetiver, patchouli, oud and guaiacwood. The structure of the base. Cedar is dry and pencil-like, sandalwood creamy, vetiver earthy and smoky, patchouli dark and chocolatey, oud animalic and resinous.

Amber and resinous

Labdanum, benzoin, frankincense, myrrh, tolu and Peru balsam. Warm, sweet, sometimes smoky. “Amber” in perfumery is an accord built from these with vanilla, not fossil amber.

Gourmand

Vanilla, tonka bean, caramel, praline, coffee, chocolate and honey. Edible-smelling notes popularised by Angel in 1992. Usually base notes, and very long-lasting.

Musky and animalic

White musk, ambergris, leather and civet-like notes. Today they are almost all synthetic or plant-based (natural ambergris is rare and costly). Musks give a soft, clean, skin-like finish and are in almost every modern perfume.
